With Strawberry season just around the corner, I have not been able to stop obsessing about them! This sweet delicious member of the rose family is divine in just about everything. Immediately improving the flavour of smoothies, cereals, salads, desserts or even just enjoy them on their own with almond or coconut mylk and a touch of immune boosting raw honey. (creamed is my favourite) Mmm… I love to roll them in fresh cashew cream too!
One of my fondest memories of growing up is piling into the car with… my Mom, sister and grandma to go strawberry picking at local farm where we grew up. We would leave with amazingly full bushels of strawberries and very full bellies… I think we may have eaten more than we picked. Once home we would gather in the kitchen to hull all the berries for strawberry jam, strawberry rhubarb pie and crisp.
My Mom’s strawberry jam was always worth the effort! I will be sure to share a healthier version of Mom’s jam soon.
While we patiently wait for strawberry season to arrive here in Ontario I whipped up this yummy smoothie for my husband and I for breakfast the other morning with fresh organic strawberries from California. Bruce gifted his seal of approval for this heart healthy delicious breakfast option.
1 1/2 Cups Almond/Coconut/Hemp Mylk
1 Cup Fresh/Frozen Strawberries
1 Tbsp Honey
1 Tsp Vanilla Extract or 1/2 Vanilla Bean
1 Tbsp Flax or Coconut Oil
1 Tbsp Ground Flax Seed
Optional Top with 2 Tbsp Hemp Hearts or stir in 1 Tsp Lucuma
Place all the ingredients into a high speed blender and blend. When using fresh strawberries add a few ice cubes for texture and temperature. Other optional add ins would be Hemp Hearts for added protein and Lucuma to inspire a slightly caramel flavour with a low glycemic index. You will find Lucuma in the health food section of your local grocery or health food store. In addition it supports cardiovascular health along side the heart healthy antioxidant benefits of Cinnamon and Strawberries.
